Tuna Potato Salad on a plate with sliced tomatoes

An easy-to-make main dish potato salad. It’s even easier if you use already diced canned potatoes.

TUNA POTATO SALAD (Pantry Cooking: Unlocking Your Pantry’s Potential, page 93)

1 can (6 ounces) tuna, drained and flaked
2 cans (15 ounces each) whole potatoes, drained and diced
1/2 cup salad dressing or mayonnaise
1/2 cup undrained sweet pickle relish
1 teaspoon Dijon mustard
1 teaspoon onion salt
Paprika

Toss together potatoes and tuna. In a small bowl, stir together the salad dressing, relish, mustard, and onion salt. Pour the dressing over the potatoes and mix to coat well. Spoon into a serving bowl and sprinkle with paprika. Chill or serve immediately.
