Make a special Father’s Day meal for Dad from food storage. It’s easy enough for the kids to help until the kabobs go into the broiler. If you don’t have metal skewers, keep a watch on the bamboo or wooden skewers. They will get very brown as the kabobs broil.

TURKEY KABOBS (Pantry Cooking II)

1 can (12 ounces) Spam Oven Roasted Turkey
1 can (8 ounces) pineapple chunks, drained, reserve juice (or 3/4 cup pineapple chunks and 1/3 cup juice)
2 tablespoons packed light brown sugar
2 tablespoons soy sauce
1/4 teaspoon garlic powder
16 1-inch squares of bottled roasted red pepper

Cut the turkey loaf into 4 slices and each slice into 8 cubes. Put into a zipper sealed bag or a shallow baking dish. Combine reserved pineapple juice, brown sugar, soy sauce, and garlic powder. Pour over cubes of turkey. Marinate for 30 minutes. Alternately thread chunks of marinated turkey, pineapple chunks, and squares of red pepper onto metal skewers. Broil for 10 minutes, turning occasionally. Serve with rice or couscous. Serves 4.
