A bowl of baked potato soup

This is another shelf stable option that’s similar to the Readywise Cheesy Potato Soup mix (but better!).

This recipe is more expensive ($2.03 per serving) than Cheese and Potato Soup. It’s a richer soup with more expensive ingredients. It’s more expensive because canned soups and bacon have increased in price the last 3 years. However, it’s still less expensive than some single pouch prices of the dried soup and not too much more than most prices. ($1.39-$2.34) Storing the separate ingredients for this recipe will give more options for meal preparation, too.

The preparation time for both this recipe and the dried soup are about the same.

Two more reasons to stock ingredients for this soup – this is a good recipe for Dinner in a Basket (just include 2 cans of evaporated milk and a small sealed pouch of bacon bits instead of measuring out those ingredients) and this soup can be included in your menus for emergency cooking.

BAKED POTATO SOUP (Pantry Cooking II)

2 cans (10-3/4 ounces each) condensed Cheddar Cheese soup
2-1/2 cups evaporated milk
1 can (15 ounces) whole potatoes, drained and mashed coarsely
1/2 cup real bacon bits (about 2 ounces)
Dried chives

Combine soup and milk until smooth. Add potatoes and bacon. Simmer about 20 minutes over medium low heat, stirring occasionally. Sprinkle chives on each serving. Serves 4.
