Spam Salad sandwich on a plate with potato chips and orange sections

I was surprised how quickly this sandwich filling disappeared when it was a lunch option for my grandchildren. They were quite happy when I made a second batch.

This recipe will stretch a can of Spam far beyond the normal 3 or 4 servings and is a great way to rotate your Spam supply.

SPAM SALAD (Pantry Cooking with Home Preserved Foods)

1 can (12 ounces) low sodium Spam
1/2 cup mayonnaise
1/2 cup sweet relish

Grate the Spam on the large holes of a box grater. Stir in mayonnaise and relish. Use as sandwich filling, on crackers, or to fill celery sticks.
