Pot Roast for Two on a dinner plate

Make a tender, fall-apart roast dinner for two (or three) in 30 minutes with home canned beef and vegetables. Use commercially canned ingredients if you don’t have any home canned.

Cost per serving using commercially canned ingredients is $1.47 to $3.90 depending on whether it serves 2 or 3 and how much you pay for the canned beef. Home canned is almost always less. Compared to freeze-dried beef pot roast at $7.17 per serving – based on the online price – it takes just a few minutes longer and is just as easy.

POT ROAST FOR TWO (Pantry Cooking with Home Preserved Foods)

1 pint beef chunks
1 pint potato chunks, rinsed and drained
1 pint sliced carrots, drained

Drain beef, reserving broth. Pour beef into an 8×8” square baking pan. Surround the beef with potatoes and carrots. Pour reserved broth over the vegetables. Cover the pan with aluminum foil. Bake in a preheated 325o oven for 30 minutes. Serves 2 to 3.
