Summer is the best time to dehydrate tomatoes. Field and garden ripened tomatoes are more abundant and prices are lower.
Try making some Smokey Dried Tomatoes in addition to plain tomatoes. Meatier tomatoes, like Roma, result in a better end product. They are easy to prepare and dry in less than 24 hours. No need to peel. Just core, slice, brush, and dry. Using a tomato shark for coring makes the preparation even faster.
Use dried tomatoes on pizza, in salads, for snacking, or in recipes such as pesto, pasta, and flavored mayonnaise.
