I posted a sweet version of this sandwich filling in April. We find that we like this dill version just as much.
For a home canned version of dill relish, look to the Ball Blue Book: Guide to Preserving for a great recipe. It’s on page 87 of the 37th edition.
DILL SPAM SALAD (Pantry Cooking II)
1 can (12 ounces) low sodium Spam
1/4 cup mayonnaise
3 tablespoons Dijon mustard
1/2 cup dill relish
Grate the Spam on the large holes of a box grater. Stir in mayonnaise, mustard, and relish. Use as sandwich filling, on crackers, or to fill celery sticks.
