Make instant oatmeal cups for busy school mornings and to eat before early church meetings, before early work departures, or anytime you want a quick wholesome breakfast. They work well when travelling, too. Package them in sandwich bags or 1/2 cup plastic containers. The plastic containers can also serve as a measuring cup for the water.
Try Microwave Chocolate Oatmeal or Brown Sugar and Cinnamon Oatmeal. Add a peach fruit cup to the Brown Sugar and Cinnamon to have Peach Cobbler for breakfast.
BROWN SUGAR AND CINNAMON OATMEAL (Pantry Cooking II)
1/3 cup rolled oats, either quick or regular
1/16 teaspoon salt
2 teaspoons brown sugar
1/4 teaspoon cinnamon
1/2 cup water
Mix all dry ingredients in a cereal bowl. Stir in water. Microwave on HI for 75 to 90 seconds. Stir until remaining water is absorbed. Serve with milk. Serves 1.
Note: Regular rolled oats will result in cereal with more texture.
PEACH COBBLER OATMEAL (Pantry Cooking II)
1 recipe Brown Sugar and Cinnamon Oatmeal
1/2 cup diced peaches with syrup/juice or 1 4-ounce cup diced peaches
Prepare oatmeal as directed in the recipe. Stir in peaches and the syrup or juice they were canned in. Serves 1.
BTW, the above recipe was a happy accident. We were travelling by car during COVID. We carry food with us to eat on the road and in the hotels. Breakfast at the hotels during COVID was very limited and my digestive issues were not going to agree with what was available at one hotel. I had Brown Sugar and Cinnamon Oatmeal cups with us, just in case. I also had peach fruit cups as a side option for lunches and dinners. I needed something to add to the oatmeal since I couldn’t get milk, and the thought came to me to add a cup of fruit. Voila! Peach Cobbler Oatmeal!
