We have a red apple tree that produces apples that are rather dry and almost tasteless. They are not that good to eat fresh, make a pie with, or make applesauce with unless combined with another stronger flavored apple. They do, however, make great dried apples. The dehydrating concentrates the sugars and the flavors, making them a great snack alone or in a trail mix.
