Roasted potatoes on a red plate with a sandwich and slaw

Make your Labor Day cookout easier by using canned potatoes instead of fresh for these roasted potatoes. Using aluminum foil cuts down on clean-up time so you have more time to enjoy your guests.

ROASTED POTATO PACKET (Pantry Cooking II)

1 can (15 ounces) diced potatoes, drained
2 tablespoons dried onion
1/4 teaspoon seasoned salt
1/4 teaspoon garlic salt
1/8 teaspoon pepper, or to taste
2 tablespoons olive oil

Combine ingredients until potatoes are evenly coated with seasonings and oil. Place mixture onto the middle of a 12 x 18-inch piece of heavy-duty foil. Wrap potatoes loosely, sealing edges with a double fold. Place packet fold side down on a jelly roll pan. Bake at 450oF for 30 minutes, turning once.
