Mincemeat Tarts in a muffin pan

What do you do when only a few people at your holiday dinner like mincemeat pie, and you want to make it easy to share leftovers with guests who do? Make tarts! These are so much less expensive than commercially prepared mincemeat tarts, too.

MINCEMEAT TARTS (Pantry Cooking II)

2-1/2 to 3 recipes pie pastry
1 jar (27 ounces) mincemeat pie filling
Granulated sugar

Roll out about half of the pastry dough and cut 12 4-inch circles, rerolling pastry dough as needed. Line 12 muffin pan cups with the circles of pastry, fitting the pastry to the cups as needed. Fill each cup with mincemeat. Roll out remaining pastry and cut 12 3-inch circles, rerolling pastry dough as needed. Cover each filled cup with a pastry circle. Cut vent holes in each. Brush tops with water and sprinkle with sugar. Bake at 425o for 20 minutes. Remove from muffin cups when completely cooled.
