Cheese and Chive Mashed Potatoes

Here’s an easy side dish to serve with leftover Christmas or New Year’s ham.

CHEESE AND CHIVE MASHED POTATOES (Pantry Cooking II)

Instant potato flakes to make 4 cups mashed potatoes
Water
Milk
4 ounces Velveeta, shredded
1 tablespoon dried chives

Prepare potatoes with water and milk according to package instructions (leave out the butter/margarine). Stir cheese in after the potato flakes. When potatoes are ready per instructions, stir in chives. Serves 6 to 8.

TIP: Velveeta is easier to shred/grate when it’s cold.
