A bowl of Popcorn Soup

January is National Soup Month and today, January 19, is Popcorn Day. Celebrate both with a soup the kids will love as they get to eat popcorn for dinner.

Don’t be tempted to leave out the popcorn garnish! It makes a big difference in the flavor of the soup.

By the way, this is a great option for Dinner in a Basket. Just add a package of microwave popcorn to the cans and seasonings. Your friend will have dinner ready almost as fast as it takes to pop the popcorn!

POPCORN SOUP (Pantry Cooking II)

2 cans (15 ounces each) cream-style corn
1 can (11 ounces) whole kernel corn, drained
1 can (12 ounces) skimmed evaporated milk
1 can (14 ounces) chicken broth
1 can (15 ounces) diced potatoes, drained
1 chicken bouillon cube or 1 teaspoon chicken bouillon granules
1 teaspoon sugar
3-4 cups popped popcorn

Combine all corn, milk, broth, potatoes and bouillon in a large pan or Dutch oven. Heat over medium heat, stirring often. Heat until soup is hot but not boiling. Remove from heat and stir in sugar. Generously garnish each bowl of soup with popcorn. Serves 6 to 8.

Note: Soup can be garnished with oyster crackers or crushed saltines instead of popcorn.
