The second package of Readywise Simple Kitchen dried soup I purchased (see January 24 post) was Cheesy Potato Soup. It, also, was easy to prepare by just adding the mix to boiling water. Again, I recommend using a whisk to stir the soup powder into the water.

This soup does taste potatoey but it does not taste cheesy. It’s fine without adding extra cheese, though. There are cubed dried potatoes in the mix so there is some texture. I recommend cooking the soup for the entire 15 minutes to make the potatoes softer. The time range is 12 to 15 minutes. I cooked it about 13 minutes and the potatoes were rehydrated but still more firm than I like in a potato soup.

This, also, is a thick soup but not as thick as the Creamy Cheddar Broccoli Soup. I personally think it doesn’t need to be that thick. They could cut back on the cornstarch in the mix.

Reminder – test before you stock up on dried products designed for “emergency” use. This soup is better than the other, but I would still get tired of eating it after a few meals primarily because of the texture.

Look for 2 options for making a cheese and potato soup from shelf stable ingredients during the month of February. One is less expensive and more tasty than the Readywise. The other is more expensive but the expense is justified by the ingredients (like bacon!). Both take only a few minutes more to prepare than the Readywise dried soup.
