Green Chile Queso in a small slow cooker

It’s rodeo time in Houston and rodeo food always includes Tex-Mex. Here’s a queso that uses home canned sausage (or 1/2 lb. crumbled cooked sausage). It’s a great alternative to the green chile and tomato or chili versions.

GREEN CHILE QUESO (Pantry Cooking with Home Preserved Foods)

1 lb. Velveeta, cubed
1 can (7 ounces) chopped green chiles
1 half pint crumbled sausage, drained
1 tablespoon water

Stir together all ingredients in a small, heavy saucepan. Heat, stirring often, over medium low heat until cheese is melted and smooth. Serve with tortilla chips.
