POT ROAST FOR TWO (Pantry Cooking with Home Preserved Foods)
1 pint beef chunks
1 pint potato chunks, rinsed and drained
1 pint sliced carrots, drained
Drain beef, reserving broth. Pour beef into an 8×8” square baking pan. Surround the beef with potatoes and carrots. Pour reserved broth over the vegetables. Cover the pan with aluminum foil. Bake in a preheated 325o oven for 30 minutes. Serves 2 to 3.
