A clear square bowl of Herb Seasoned Quinoa

This recipe can be served as a side dish or become the base of a salad, skillet meal, or casserole. Always be sure to rinse quinoa thoroughly before cooking it. Quinoa has natural saponins on the surface that will make it bitter (and soapy) tasting. The saponins are a natural pest deterrent that can be removed just by rinsing it well.

HERB SEASONED QUINOA (Pantry Cooking II)

1 can (14 ounces) chicken broth
1 cup quinoa, rinsed well
1 tablespoon olive oil
1 teaspoon herb blend

Combine broth and rinsed quinoa in a medium saucepan. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until liquid is absorbed. Remove from heat. Stir in oil and herb blend. Cover and let sit for 5 minutes. Fluff with a fork before serving. Serves 4.
