Quart jars of home canned gold potatoes

Red and gold potatoes were on sale recently at one of my local grocery stores. Five-pound bags were selling for $1.97 so I bought 2. Those 10 pounds of potatoes filled 7 quart jars for the low cost of .56 per quart (plus lid cost) or .28 per pint which is about the same as a 15-ounce can in the store. The advantage of home canning is that you can decide what size and shape you want the potatoes and, best of all, they taste better than the canned potatoes in the store. Red, white, and gold potatoes hold together better than russets when they are canned. Use them in soups, stews, casseroles, fried, roasted, or for a quick potato salad.
