A simple way to sweeten plain rice for a side dish or for breakfast.
ORANGE RICE (Pantry Cooking: Unlocking Your Pantry’s Potential, p. 103)
1-1/2 cups water
1/2 cup orange juice
1 teaspoon dried grated orange peel
1/2 teaspoon salt
1 cup regular long grain rice
Combine water, orange juice, orange peel and salt in a medium saucepan. Bring to a boil; stir in rice with a fork. Cover; reduce heat to low. Cook 20 minutes or until liquid is absorbed and rice is tender. Serves 4 to 6.
