Pint jars of sweet zucchini relish

Looking for another way to use all that extra zucchini?  Use it, instead of cucumbers, to make sweet relish.

SWEET ZUCCHINI RELISH (Pantry Cooking with Home Preserved Foods)

1 gallon zucchini chunks (about 5 pounds)
1 red pepper, cut in chunks
3 green peppers, cut in chunks
3 large onions, cut in chunks

Grind the vegetables. Cover with water and stir in 3/4 cup pickling salt. Let stand overnight. Drain and rinse.
