PANTRY COLCANNON (Pantry Cooking with Home Preserved Foods)
1 cup dried cabbage
2 cups water
1/2 teaspoon nutmeg
1/4 cup dried chives
4 cups prepared mashed potatoes
Combine cabbage with water in a small saucepan. Bring to a boil; reduce heat and simmer briefly until rehydrated. Drain well. Stir cabbage, nutmeg, and chives into mashed potatoes. Serves 6 to 8.
