Slice firm, ripe paste tomatoes (such as Roma) 3/8-inch thick and lay them on dehydrator trays. Brush each slice with Liquid Smoke. Dry at 130o for 20 to 24 hours or until dry. Tomatoes may still be pliable when dry but should have no pockets of moisture in them. Dry heat process in canning jars for longer shelf life.
Tomatoes may also be dried without brushing with liquid smoke.
